Naked Almond Joy

These are my favorite healthy/diet cookies. I sent them with Mike to work to see if it was just me, but they all liked them too. (Of coarse he works at a health club with physical therapists.) I thought I would share it. They are pretty yummy!


Naked Almond Joy (Naked meaning there's no chocolate coating)
4 egg whites
2/3 C splenda for baking
1/2 t pure vanilla extract
1/4 t salt
2 C shredded coconut
raw almonds for a garnish

Preheat oven to 325. Coat baking sheet with cooking spray. Whip eggs until stiff. Add spenda, vanilla, and salt. Beat until peaks form. Fold in the coconut. Spoon onto baking sheet. Place almonds on top. Bake for 15-17 minutes or until golden brown. Let cool before eating.

Makes 20 cookies. Each cookie is 56 cal. 1g protein, 3g carbs, 4.5g fat. They are high in fiber and surprisingly filling. ( =
