Strawberry Lemonade Ice Cream Cake

Some of you wanted to know what was in this amazing summer ice cream cake.

Well, I'll tell you. And you'll be glad to know it's the simplest thing ever to make. Perfect for a BBQ or summer get-together.

Strawberry Lemonade Ice Cream Cake

1 half gallon vanilla ice cream
1 container of lemonade concentrate (strawberry or raspberry if you like--next time I might try a bacardi mixer like pina colada)
graham cracker crust (I made mine with graham crackers, sugar and melted butter)

Melt or soften the ice cream. (not hard to do around here these days!) Mix ice cream and concentrate in a large bowl with a wooden spoon until thoroughly mixed. Pour over crust and smooth with a spatula. Refreeze. Make sure you have it level in the freezer or it will slide. Fits a 9x13 pan nicely.

Also, if you decide to garnish it with fruit like I did above, wait to put the big chunks on until you serve it. The half strawberries became frozen rocks and kind of hard to eat. The thin slivers I used to write the words were just fine.

This sounds like the type of cake Adam would love. Glad to know the words are fruit. When I glanced at the pic in the earlier post, I thought someone did a really bad job with red icing...hahaha. Now that I know it's not icing, it's artistic and cute :)
