I used to make this bread all the time. It's my favorite. But I haven't in a while and I thought I had lost the recipe! But I found it, and it really needs to be posted and accessible to me and everyone who wants to make awesome, easy, fast wheat bread. Seriously, this is fluffy, moist and delicious. Even the next day.
Here it is:
3 1/2 C whole wheat flour (I mill my own fresh)
1/3 C gluten flour (try your natural foods store--I use Red Mill brand)
1 1/2 T yeast
2 1/2 C steaming hot water from the tap (120-130 degrees)
1 T salt
1/3 C oil
1/3 C honey
1 1/3 T lemon juice
2 1/2 C whole wheat flour
1) Mix first three ingredients with a spoon in mixer bowl
2) Add all the water and mix with spoon for 1 min
3) Cover and let rest 10 minutes.
4) Add salt, honey, and lemon juice and beat with dough hooks for 1 minute.
5) Add remaining flour 1 C at a time while mixing until flour is mixed in. (use slow speed on your mixer)
6) Mix with dough hooks for 10 minutes
7) Pre-heat oven to 200 degrees, then turn off
8) Knead dough into well oiled counter-top. Divide into 2 loaves. Place in oiled bread pans.
9) Let rise in warmed oven for 15-20 minutes.
DO NOT OPEN THE OVEN, DO NOT REMOVE LOAVES FROM THE OVEN.
10) When the bread reaches the top of the pans, set oven to 350 degrees. When the oven reaches temperature, bake for 30 minutes. Then remove bread from pans and cool.

Thank you I will definitely give this a try. I got a Bosch mixer for Christmas a few years ago, tried two bread recipes with it that failed, and then put the mixer away. Now I have a reason to get it out and make bread. :)
