Pina Colada Chicken Salad

My sister's wedding is just days away. A close family friend threw her a beach themed Bridal Shower. My sister is is tall pretty one of the far left. (Nice try dodging the camera Shera and Aunt Lorrie--still got ya. Thank you Aunt Steph for smiling.)

The decorations were super super fun. Flip flops every where and a cooler for a punch bowl. We had so much fun!


Look at this spread. All the food was super yummy. Looking at those cherries makes me want to go out and buy some more!

I made my favorite chicken salad which I haven't made in forever. It fit the beach theme with pineapple and coconut in it. I got the recipe from my sister-in-law Emily, a true food guru. Here's the recipe to those at the shower who asked for it.

Pina Colada Chicken Salad

fills 80 small crosissants (I halved it for the shower)

5 cans white chicken drained
2 cans crushed pineapple
1 can pineapple tidbits
2-3 lbs. red grapes (sliced into dime shaped circles)
1/2 bag of coconut
1 32oz jar of real Mayo (miracle whip or light mayo alter the texture and flavor in a bad way)
1 lb. bag of slivered almonds

Mix and serve on croissants, 1 1/2 - 2 large spoonfuls on each sandwich. Don't make too far in advance or they get soggy.
